Ingredients:

  • 6-8 fresh ears of corn
  • 5 tablespoon olive oil
  • 1 teaspoon chili powder
  • 6 limes
  • 2 tablespoons honey
  • Salt to taste
  • 1 teaspoon lime zest

Instructions:

Corn Prepararion

  • Preheat smoker to 180 degrees.
  • Rub 2 tablespoons olive oil on ears of corn and season liberally all over with chili powder.
  • Place whole ears of corn on the smoker and smoke for 3 hours.
  • Remove corn from the smoker and allow to cool until warm.
  • Strip corn kernels from the cobs and place in a serving bowl.

Sauce Preparation

  • In a medium bowl, combine juice from 6 limes, 3 tablespoons of olive oil and honey.
  • Whisk well until blended.
  • Add salt to taste*.
  • Pour the sauce over the corn kernels.
  • Sprinkle with lime zest.
