Ingredients:
- 6-8 fresh ears of corn
- 5 tablespoon olive oil
- 1 teaspoon chili powder
- 6 limes
- 2 tablespoons honey
- Salt to taste
- 1 teaspoon lime zest
Instructions:
Corn Prepararion
- Preheat smoker to 180 degrees.
- Rub 2 tablespoons olive oil on ears of corn and season liberally all over with chili powder.
- Place whole ears of corn on the smoker and smoke for 3 hours.
- Remove corn from the smoker and allow to cool until warm.
- Strip corn kernels from the cobs and place in a serving bowl.
Sauce Preparation
- In a medium bowl, combine juice from 6 limes, 3 tablespoons of olive oil and honey.
- Whisk well until blended.
- Add salt to taste*.
- Pour the sauce over the corn kernels.
- Sprinkle with lime zest.
