Ingredients:
- 3 dozen chicken wings
- 12 ounces beer (Mexican lager or traditional IPA)
- 2 tablespoons olive oil
- 4 tablespoons mesquite or hickory seasoning
Instructions:
Wings Prep and Marinating
- Place wings in a large aluminum container.
- Pour beer and olive oil over the wings.
- Add the mesquite or hickory seasoning.
- Mix well to coat all the wings.
- Marinate for 4-6 hours or overnight.
Smoker
- Preheat smoker to 225°F (107°C).
- Drain wings from brine and arrange on the smoker.
- Smoke for 2-3 hours.
- Increase heat on the smoker to 375°F (190°C) and turn wings.
- Cook for 45 minutes to 1 hour until the wings are crispy.
- Remove wings from the smoker.
