Tuna Croquettes

These croquettes are made from canned tuna, bread crumbs, and eggs, seasoned with lemon juice and zest, then fried to golden perfection. Serve them hot with lemon wedges and tartar sauce for a delightful treat.

Ingredients:

  • 30 Ounces canned tuna in spring water (preferably chunk white) – well drained
  • 1 1/2 Cups Italian bread crumbs 
  • 3 Eggs
  • 1/2 Lemon juiced and zest
  • Vegetable oil for frying

Instructions:

Prep

  1. Place all ingredients except oil in large bowl and combine well until mixture is a consistency which can be formed into patties
  2. Form mixture into approximately 12-15 2 inch patties

Frying

  1. Place oil in large frying pan until oil is approximately 1/2 inch deep
  2. Preheat oil over medium high heat
  3. Working in batches, fry the croquettes in the oil 3-5 minutes per side

Serve immediately with lemon wedges, tartar sauce
