Fresh Grilled Fish

Nothing beats the taste of freshly caught fish kissed by the flames of a barbecue. This simple yet flavorful recipe brings out the best in flaky white fish like snapper or sea trout. Infused with olive oil, fresh lemon, garlic, and fragrant herbs, this dish is a perfect combination of light, zesty, and savory flavors. A true ocean-to-table delight!

Ingredients:

  • 2 pounds flaky white (snapper, sea trout)
  • 2 tablespoons olive oil
  • 2 lemons, juiced
  • 2 teaspoons coarse kosher salt
  • 1 teaspoon coarse ground black pepper
  • 3 garlic cloves finely chopped
  • 2 teaspoons oregano
  • 1 teaspoon rosemary
  • 2 teaspoons lemon zest

Instructions:

Prep & Cook

  1. Preheat the barbecue over medium-high heat.
  2. Drizzle olive oil evenly over fish filets and pour lemon juice over the fish.
  3. Sprinkle salt and pepper over fish followed by garlic.
  4. Evenly cover filets with oregano and rosemary and then distribute lemon zest to cover the filets. 
  5. Place fish filets in a fish grill basket or on greased aluminum foil directly on grill. 
  6. Grill for about 5 minutes per side depending on thickness of filets until fish flakes easily.  

Serve

  1. Serve immediately with lemon wedges.

This recipe is a delicious way to prepare fresh fish particularly those caught straight from the ocean. We spent the day fishing in Naples, FL and caught snapper and sheepshead which we had fileted and prepared this way for dinner.
