Instructions

- Boil the potatoes until fork-tender, then peel and mash them until smooth.

- Gradually add the flour, kneading gently until a soft dough forms. (Avoid over-kneading to keep the gnocchi light.)
- Divide the dough into small portions and roll each portion into a long rope about ½ inch thick.
- Cut the rope into 1-inch pieces. Optionally, roll each piece on the back of a fork to create ridges.

- Bring a large pot of salted water to a boil.
