Vegan Pesto Sauce

  • 2 cups fresh basil leaves
  • ⅓ cup pine nuts (or walnuts as a substitute)
  • 2 cloves garlic

  • ½ cup olive oil (adjust to desired consistency)
  • 1 tbsp lemon juice

Instructions

Make the Green Gnocchi Dough

  • Boil the potatoes until fork-tender, then peel and mash them until smooth.

  • Gradually add the flour, kneading gently until a soft dough forms. (Avoid over-kneading to keep the gnocchi light.)
  • Divide the dough into small portions and roll each portion into a long rope about ½ inch thick.
  • Cut the rope into 1-inch pieces. Optionally, roll each piece on the back of a fork to create ridges.

Cook the Gnocchi

  • Bring a large pot of salted water to a boil.
  • Add the gnocchi in batches, cooking for 2-3 minutes or until they float to the surface.
  • Remove with a slotted spoon and set aside.

Prepare the Vegan Pesto

  • Blend the basil, pine nuts, garlic, nutritional yeast, lemon juice, and salt in a food processor until finely chopped.
