Blueberry pastry based on flax flour

Ingredients

Dry Ingredients:

  • 1 cup (120g) flaxseed meal (flax flour)
  • ½ cup (60g) almond flour
  • 2 tbsp coconut flour
  • 2 tsp baking powder
  • ½ tsp cinnamon (optional)
  • Pinch of salt

Wet Ingredients:

  • 2 large eggs
  • 3 tbsp maple syrup or honey
  • 3 tbsp melted coconut oil or butter
  • ¼ cup (60ml) almond milk (or other milk)
  • 1 tsp vanilla extract

Filling

  • 1 cup (150g) fresh or frozen blueberries
  • 1 tbsp honey or sugar (optional)

Optional Topping:

  • 1 tbsp powdered sugar or chopped nuts

Instructions

Prepare the Oven:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix the Dough:

In a large bowl, combine flaxseed meal, almond flour, coconut flour, baking powder, cinnamon, and salt. In a separate bowl, whisk the eggs, maple syrup, coconut oil, almond milk, and vanilla. Gradually add the wet mixture to the dry ingredients, stirring until a thick dough forms.

Shape the Pastries:

Divide the dough into 8 equal portions. Flatten each portion into a circle or oval on the baking sheet.

Add the Filling:

Place a few blueberries in the center of each pastry. Drizzle with honey or sprinkle with sugar if desired. Gently fold the edges of the dough over the filling, leaving the center exposed.

Bake:

Bake for 15–18 minutes, or until the edges are golden brown.

Cool and Serve:

Allow the pastries to cool slightly before serving. Top with powdered sugar or chopped nuts for extra flavor.
