Ingredients

Green Gnocchi

  • 2 medium potatoes (about 1 lb, boiled and peeled)
  • 1 cup fresh spinach leaves (blanched and drained)
  • 1 cup all-purpose flour (plus extra for dusting)
  • ½ tsp salt

Vegan Pesto Sauce

  • 2 cups fresh basil leaves
  • ⅓ cup pine nuts (or walnuts as a substitute)
  • 2 cloves garlic
  • ¼ cup nutritional yeast
  • ½ cup olive oil (adjust to desired consistency)
  • 1 tbsp lemon juice
  • ½ tsp salt (or to taste)
  • 3 tbsp water (optional, for thinning the sauce)

Optional Toppings

  • Toasted pine nuts
  • Fresh basil leaves
  • Vegan parmesan

Instructions

Make the Green Gnocchi Dough

  • Boil the potatoes until fork-tender, then peel and mash them until smooth.
  • Blend the blanched spinach into a fine puree. Mix the puree into the mashed potatoes along with the salt.
  • Gradually add the flour, kneading gently until a soft dough forms. (Avoid over-kneading to keep the gnocchi light.)
  • Divide the dough into small portions and roll each portion into a long rope about ½ inch thick.
  • Cut the rope into 1-inch pieces. Optionally, roll each piece on the back of a fork to create ridges.

Cook the Gnocchi

  • Bring a large pot of salted water to a boil.
  • Add the gnocchi in batches, cooking for 2-3 minutes or until they float to the surface.
  • Remove with a slotted spoon and set aside.

Prepare the Vegan Pesto

  • Blend the basil, pine nuts, garlic, nutritional yeast, lemon juice, and salt in a food processor until finely chopped.
  • Slowly drizzle in the olive oil while blending until a smooth sauce forms.
  • Add water if you prefer a thinner consistency.
  • Toss the cooked gnocchi in the pesto sauce until well-coated.

Serve

  • Serve immediately, garnished with toasted pine nuts, fresh basil, and vegan parmesan if desired.
