Ingredients

For the chicken

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste

For the sauce

  • 3 garlic cloves, minced
  • 1 cup gluten-free chicken broth
  • ¼ cup fresh lemon juice
  • 1 tbsp gluten-free Dijon mustard
  • 1 tbsp honey
  • 1 tsp dried thyme
  • 1 tsp rosemary
  • 2 tbsp capers (optional)

For serving

  • Fresh parsley, chopped
  • Lemon wedges

Instructions

Season chicken

  1. Pat chicken dry.
  2. Rub with garlic powder, paprika, salt, and pepper.

Sear chicken

  1. Heat olive oil in a large skillet.
  2. Sear chicken 4-5 mins per side until golden.
  3. Remove and set aside.

Make sauce

  1. In the same skillet, sauté garlic for 1 min.
  2.  Add broth, lemon juice, mustard, honey, thyme, and rosemary.
  3. Simmer 3 mins.

Finish cooking

  1. Return chicken to skillet.
  2. Spoon sauce over it.
  3. Cover and cook 10-12 mins until chicken reaches 74°C (165°F).

Garnish

  1. Sprinkle with parsley and capers.
  2. Serve with lemon wedges and gluten-free rice or roasted veggies.
