Ingredients
For the chicken
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & pepper to taste
For the sauce
- 3 garlic cloves, minced
- 1 cup gluten-free chicken broth
- ¼ cup fresh lemon juice
- 1 tbsp gluten-free Dijon mustard
- 1 tbsp honey
- 1 tsp dried thyme
- 1 tsp rosemary
- 2 tbsp capers (optional)
For serving
- Fresh parsley, chopped
- Lemon wedges
Instructions
Season chicken
- Pat chicken dry.
- Rub with garlic powder, paprika, salt, and pepper.
Sear chicken
- Heat olive oil in a large skillet.
- Sear chicken 4-5 mins per side until golden.
- Remove and set aside.
Make sauce
- In the same skillet, sauté garlic for 1 min.
- Add broth, lemon juice, mustard, honey, thyme, and rosemary.
- Simmer 3 mins.
Finish cooking
- Return chicken to skillet.
- Spoon sauce over it.
- Cover and cook 10-12 mins until chicken reaches 74°C (165°F).
Garnish
- Sprinkle with parsley and capers.
- Serve with lemon wedges and gluten-free rice or roasted veggies.
