- ½ tsp ground black pepper
- 1 tsp salt (adjust to taste)
- 4 cups vegetable broth (organic if possible)
- ½ cup coconut cream (or any unsweetened plant-based cream)
- 1 tbsp all-purpose flour (or cornstarch for gluten-free)
- 1 tbsp soy sauce or tamari (optional, for depth)
- Fresh parsley, for garnish
Instructions
Sauté the Aromatics
- Heat olive oil or vegan butter in a large pot over medium heat. Add chopped onion and sauté for 3-4 minutes until softened and golden.
- Stir in the minced garlic and cook for 1 minute until fragrant.
Cook the Mushrooms
- Add the sliced mushrooms to the pot. Cook for 6-8 minutes, stirring occasionally, until they release their liquid and begin to brown.
