Smoked Turkey and Jalapeño Knish

This Texas-inspired kosher knish combines the smoky richness of slow-smoked turkey, the creaminess of mashed potatoes, and the spicy kick of jalapeños inside a flaky, golden-brown pastry. It’s the perfect fusion of Jewish comfort food and Texas BBQ flavors!

Ingredients

The Dough:

  • 2 cups all-purpose flour
  • ½ tsp salt
  • ½ cup water
  • ¼ cup vegetable oil
  • 1 egg yolk (for egg wash)

For an easier option – 1 sheet kosher puff pastry (store-bought, parve) (flour or corn)

The Filling:

  • 1 ½ cups shredded smoked kosher turkey
  • 2 medium potatoes, peeled and boiled
  • 1 small onion, finely diced
  • 1 tbsp olive oil
  • 1-2 fresh jalapeños, finely diced (adjust for spice level)
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper

The Honey-Chipotle Dipping Sauce:

  • ¼ cup honey
  • 1 tsp chipotle powder or 1 minced chipotle in adobo
  • 1 tbsp apple cider vinegar
  • ½ tsp salt

Instructions

Prepare the Filling

  1. Heat 1 tbsp olive oil in a pan, then sauté the onions and jalapeños for 2-3 minutes until softened.
  2. In a bowl, mash the boiled potatoes until smooth.
  3. Add the shredded smoked turkey, sautéed onions/jalapeños, and spices. Mix well.
  4. Let the filling cool slightly.

Make the Dough (Skip if Using Puff Pastry)

  1. Mix flour and salt in a bowl. Add water and oil, stirring until a dough forms.
  2. Knead the dough for 5 minutes, then cover and let rest for 20 minutes.

Assemble the Knishes

  1. Roll out the dough (or puff pastry) into a ¼-inch thick rectangle.
  2. Cut into 4×4-inch squares.
  3. Place 2 tbsp of filling in the center of each square.
  4. Fold the edges over the filling, pinching them to seal.
  5. Brush the tops with egg yolk wash for a golden crust.

Bake & Serve

  1. Preheat oven to 375°F (190°C).
  2. Place knishes on a parchment-lined baking sheet.
  3. Bake for 25-30 minutes or until golden brown.
  4. Serve warm with honey-chipotle dipping sauce.
