Ingredients:
- 30 Ounces canned tuna in spring water (preferably chunk white) – well drained
- 1 1/2 Cups Italian bread crumbs
- 3 Eggs
- 1/2 Lemon juiced and zest
- Vegetable oil for frying
Instructions:
Prep
- Place all ingredients except oil in large bowl and combine well until mixture is a consistency which can be formed into patties
- Form mixture into approximately 12-15 2 inch patties
Frying
- Place oil in large frying pan until oil is approximately 1/2 inch deep
- Preheat oil over medium high heat
- Working in batches, fry the croquettes in the oil 3-5 minutes per side
Serve immediately with lemon wedges, tartar sauce
