Ingredients

Jackfruit & Seasoning:

  • 3 cans (14 oz each) young green jackfruit in water or brine, drained and rinsed
  • 2 cups (0.47 l) barbecue sauce (Sweet Baby Ray’s or another vegan-friendly option)
  • 1 tbsp olive oil
  • 1/2 cup vegetable broth
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Smoking Setup (Optional):

  • Wood: Applewood (mild & sweet) or hickory (bolder flavor)
  • Spritz: 1 cup apple juice + 1 cup water (keeps jackfruit moist)

Instructions

Prep and Set the Slow Cooker

  1. Heat olive oil in a pan over medium heat. Add the drained jackfruit and sauté for 3-5 minutes to remove excess moisture.
  2. Transfer jackfruit to a slow cooker. Add barbecue sauce, vegetable broth, brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Set the slow cooker to low and cook for 6 hours, stirring occasionally.

Shred and Serve

  1. After cooking, use two forks to shred the jackfruit into a pulled meat-like consistency.
  2. If the mixture has too much liquid, cook uncovered for an additional 15-20 minutes to reduce excess moisture.
  3. Serve on hamburger or slider buns.
